Simple Chicken Escarole Soup

This soup will serve six people

Ingredients: 4-6 small boneless thighs

1/2 lb ground hamburger or Turkey

1 large can or box chicken broth

1 small bag carrots

1 bunch escarole

1 box of orzo pasta

Grated Parmesan cheese,dry basil,garlic powder


Cook chicken thighs first at 350 for 20 min.Put broth in large pan add equal parts water. Mix hamburger with 1tsp basil 1/2 tsp garlic powder tbsp grated cheese. Roll in to mini balls tsp size. Add raw to hot broth,let cook for 15 minutes. Chop carrots then add to hot broth. Remove chicken from oven cut up in to small pieces add to broth cover and simmer for 20 minutes. Add orzo till tender then remove from heat. Chop escarole add to pot, cover let stand for 5 minutes. Serve and top with grated cheese.
